α-Galactosidase is an exoglycosidase, which can specifically catalyze the α-galactosidic bond at the end of the sugar chain in polysaccharides, glycolipids, and glycoproteins, and hydrolyze the oligomerization of raffinose, stachyose and verbascose. Sugar is finally degraded into disaccharides that can be used by animals, which improves the utilization of nutrients.
